Hotel Chef de Cuisine

**This position is based out of a Restaurant and Bar in a Historic Downtown San Diego Hotel.**

The role is part of a large well-established hospitality company; a progressive and diverse company that has been serving the corporate, social, and production industry for over 30 years. The company also manages and operates several restaurant and event facilities throughout San Diego, including all Food and Beverage Services at this hotel property.

We pride ourselves on preparing creative culinary events for our clients. We are looking for an experienced and passionate Chef de Cuisine to help support our team. The ideal candidate for this position has previous experience in catering, hotel and/or restaurants and enjoys working in a busy kitchen environment and can take direction well while multi-tasking effectively. 5 years prior hotel, restaurant, kitchen and/or catering experience is needed. Kitchen management experience required.

Job Duties:

  • Culinary product purchasing

  • Menu development and creation

  • Culinary prep and service for all the hotels' service areas

  • Inventory and product management

  • Create recipes and SOP’s

  • Direct and supervise daily operations of the kitchen, providing professional leadership and training to personnel

  • Ensure food quality by maintaining the highest standards, including proper food handling and maintaining a clean and well-organized kitchen facility

  • Hire and train culinary employees in company policies and procedures

  • Daily set up and breakdown of hotel kitchen, including sanitation and proper organization

  • Work with supervisor outside of the above responsibilities when asked

 

Skills Required:

  • Hotel experience is a must

  • Ability to manage and delegate tasks while staying organized

  • English reading, writing and math skills

  • Frequent lifting and transporting up 60 lbs

  • Frequent bending, stooping, and reaching

  • Constant standing throughout shift

Hotel Catering Sales Manager

Location: Downtown San Diego, CA

Work Schedule: Full Time, Average 45-50 hours per week

We are looking for a dynamic and energetic sales and event associate that has at least 3 years’ experience in the venue rental, catering, and event industry.   The candidate should be comfortable establishing and cultivating relationships with new and existing clientele, is self-managed, motivated working with a small day to day team and shows a passion for their work.  Local knowledge and experience within Southern California is preferred. 

Job Duties:

  • Sales/Client Service:       

    • Employee responsible for the solicitation of new business including outside cold sales calls, internal/existing client service, responding to client inquiries, and the management and maintenance of existing BTS client base. Job duties include managing venue inbox and leads through outside websites (i.e. WeddingWire), conducting venue site walk throughs and regular correspondence with clients. Coordination of event details including creating venue usage timeline, diagram, managing vendors (i.e. rental equipment, florals, entertainment, labor requirements etc.), efficiently transferring event knowledge to operational team within format and guidelines set forth.  Invoice client for Venue Rental services and reconcile final billing as required. Build productive working relationships with other Sales Managers to ensure seamless process for clients.

  • Marketing:                             

    • Support Director of Marketing and Communications by sharing images for social media, providing client feedback on marketing collateral and regularly meeting to discuss marketing and sales priorities for the venue. Work in collaboration for any onsite marketing events including Open Houses or Vendor Showcases

  • On-Site at Events:                

    • Employee is expected to oversee the event and manage the load-in and load-out with the Facilities Manager. Liaise between client changes and requests and BTS operations staff or make proper introductions between client and Event Manager in order to ensure a smooth transition between sales and operations and overall client satisfaction. Ensure all BTS and Hotel protocols are followed during the duration of the event. After each event, follow up with Thank You Note and request for reviews.

  • Administrative:                     

    • Maintaining client files, utilizing catering software for all client database information, maintaining venue inventory list, maintain preferred vendor list, creation of weekly staff schedule and other tasks as required. Manage HGH Events inbox and respond to any inquiries as well as personal inbox and third party lead providers (i.e. WeddingWire).

  • Venue Management:             

    • Supervise onsite team: Facilities Manager. Manage venue Standard Operating Procedures for FOH and BOH operations and adjust as needed. Conduct weekly meetings with the Hotel General Manager and Director of Sales to ensure clear communication and expectations.  Maintain relationships with hotel staff including General Manager, Director of Sales, Facilities Manager and Front of House Staff. Act as point of contact for BTS team running Salt & Whiskey.

  • Sales Cultivation:                 

    • Employee will be required to cultivate a new client base to attract clients to book the use of the venue, especially the Urban Garage. This includes generation of new leads as well as cultivating current BTS client relationships. Attend Venue Manager’s Meetings, KID meetings and maintain membership in any other relevant groups to build funnel for referrals. Participating in and reporting back on two networking events a month.

  • Skills Required:                   

    • Strong interpersonal oral and written skills.

    • Strong knowledge of job duties and functions.        

    • Ability to adapt to changing demands.

    • Ability to prioritize workflow resulting in efficient and accurate results.

    • Self-Starter, ability to take a project from inception to completion independently.

    • Proven sales ability from inquiry to final sales/client commitment.

Warehouse Manager

Location: San Diego, CA

Work Schedule: Full Time, Average 45 hours per week

We are looking for a dynamic and energetic Warehouse Manager that has at least 3 years’ experience, preferably in the hospitality industry. Must have strong leadership and interpersonal communication skills, with the ability to manage and develop a team. This position reports to the Director of Operations.

 

Job Duties & Responsibilities:

A. Warehouse Staff

  1. Maintain warehouse staff by recruiting, selecting, orienting, and training employees

  2. Maintain warehouse staff job results through planning, monitoring, and appraising job results

  3. Manage warehouse schedule

  4. Manage daily task list in coordination with Logistics Manager and Director of Operations

  5. Assign work, set completion dates, review work, and manage performance in accordance with organizational policies, procedures, and performance management processes

  6. Provide coaching, mentoring, and counseling to warehouse employees, and issue corrective action when required

  7. Coordinate with Staffing & Operations Manager to schedule Event Managers/Service staff for Warehouse Training

  8. Coordinate with Staffing & Operations Manager to schedule Warehouse staff for events offsite

  9. Coordinate with Special Projects Manager to schedule Warehouse staff for BTS special projects throughout the year

 

B. General Operations/Warehouse

  1. Maintain inventory of warehouse equipment, china, linen, décor, dry goods, beverages, etc. by conducting physical counts and reconciling with inventory system

  2. Maintain inventory of liquor cage and establish process to check-in/check-out goods for events, tracking consumption, placing orders to maintain PAR levels

  3. Develop and monitor procedures for safety and security of warehouse environment by establishing and monitoring security procedures and protocol in compliance with CAL Osha regulations, to include regular logs and trainings.

  4. Establish procedures for warehouse receiving area and maintain logs in coordination with the Front Office

  5. Maintain BTS Vehicle Maintenance Program through established tracking system, keeping up to date with regular and scheduled maintenance and repair of BTS vehicle fleet

  6. Coordinate with Logistics Manager on scheduling of delivery vehicles for daily drops and event use

  7. Liaise with Rental Equipment companies to assure all orders are placed, accurate, timely and properly returned

  8. Work with Director of Operations to establish new protocols and procedures to ensure that all events are complete and accurate when pulled and trucks/vans are properly loaded and all equipment is accounted for

  9. Work with Director of Operations to establish new protocols and procedures to ensure that all equipment and rentals are properly returned and inventoried to the warehouse

  10. Contribute to team effort by accomplishing related results as needed

 

C. Special Projects

  1. Work with BTS Director(s) and/or Managers on special projects and events.

  2. Work with Director of Operations to create and implement operational systems and procedures to be carried out by all warehouse/logistics staff.

  3. Work with Director of Operations to continually improve systems and work flow efficiencies.

  4. Oversee and monitor building maintenance needs and repairs, as required

  5. Other special project duties, yet to be determined.

D. Management Reporting/Responsibilities

  1. Work with BTS Management Team to assure proper communication and information dissemination between BTS Management Team and staff.

  2. Provide regular updates and reports as to the progress and issues relating to the warehouse, as requested.

Event Manager

Responsibilities include managing event employees, client needs on event site, menu integrity, communication with onsite kitchen team, timely service, event set-up, event clean-up, load-out of event and overall operation of catering areas at all assigned events and functions. Employee will communicate and coordinate all event details with the Sales Manager and Executive Chef prior and post event. We count on this employee to be our client liaison and ensure that all guests (including our client) are beyond satisfied with their experience.

 

Captain/Lead Server

Responsibilities include managing a team of employees, menu integrity, communication with onsite kitchen team, timely service, event set-up, event clean-up, load-out of event and overall operation of catering areas at all assigned events and functions. We count on this employee to ensure that the event runs smoothly and that all guests are beyond satisfied with their experience. Employee works with Event Manager onsite.

 

Bartender/Barback

Responsibilities include set up and service of all BTS bars as well as running beverage product from BOH areas to maintain a fully stocked, efficient bar area. Bars will range from Full Top Shelf to Beer & Wine. A knowledge of basic cocktails, beer and wine, ABC rules and regulations and a willingness to jump in where needed is required. We count on this position to greet and assist guests in a friendly, polite manner. Tasks may also include keeping all areas clean by bussing tables, changing out and running trash in/to BOH areas and overall set-up and tear down of venue catering equipment and service/prep areas.

 

Server

Responsibilities include set-up and service of food buffets/stations, as well as running food from our BOH areas to the FOH to maintain a clean and fully stocked front of house. We count on this group to maintain food standards, as well as greet and assist guests in a friendly polite manner. Tasks may also include overall set-up and tear down of venue catering equipment and service/prep areas.

 

Bussers/Runners

Responsibilities include keeping all areas clean by bussing tables, wiping down buffets, changing out and running trash in/to BOH areas. Tasks may also include set-up and service of food buffets/stations, as well as running food from our BOH areas to the FOH to maintain a clean and fully stocked front of house in addition to the overall set-up and tear down of venue catering equipment and service/prep areas.

 

Delivery Driver

Responsibilities include maintaining cleanliness of vehicle, daily check-in & check-out. Comfortability driving a variety of vehicles from transit vans to refrigerated trucks. Good driving record & road safety top priority. Tasks may also include packaging out meals and restocking/cleaning of work stations.

 

Warehouse

Responsibilities include sorting, packing, loading, delivery, unloading, and tasks related to the product and order fulfillment for operational venues. Employee required to lift 50lbs.
