The Director of Sales requires a dynamic and energetic sales professional, that has at least 4 years’ experience in the catering and event industry. The candidate should be comfortable establishing and cultivating relationships with new and existing clientele and show a passion for their work. Finally, the Director of Sales position will be the leader of our diverse sales team and will need to be comfortable managing and motivating various BTS staff and accompanying personalities.

Job Duties & Responsibilities:

Sales Management

Employee responsible for leading the sales efforts and sales team members in the solicitation of

new business including outside cold sales calls, internal/existing client service, responding to client

inquiries, and the management and maintenance of existing company client base. Job duties may

include preparing event proposals, menu plans, attending walk throughs and regular

correspondence with BTS clients. Coordination of event details including vendor management (i.e.

rental equipment, florals, entertainment, labor requirements etc.), efficiently transferring event

knowledge to operational team within format and guidelines set forth.

On-Site at Events

Employee may need to attend client events if appropriate and liaise between client changes and

requests and company’s operations staff or make proper introductions between client and Event

Manager in order to ensure a smooth transition between sales and operations and overall client

satisfaction.  Employee may be required to participate in on-site event management preparation

and supervision at party/event site from time to time, however this is the exception, and will be at the discretion of the BTS Managing Director/President.

 

Special Projects

Employee from time to time may be asked to work or assist on Special Large-Scale projects (i.e.

Olympic Games, Rose Bowl Game, 3 Day Walk) which may include administrative tasks, client

service tasks, on site event management, or other associated duties associated with the project. 

Often these special projects result in a performance bonus payment in addition to the employee’s

base salary, however, this additional compensation is not guaranteed or implied.

Sales Cultivation:                 

Employee will be required to cultivate a new client base. This includes generation of new leads as well as cultivating current BTS client relationships.

Restaurant/Bar General Manager

We are looking for a dynamic and energetic General Manager for our Salt & Whiskey Restaurant & Bar that has at least 5 years’ experience in the Restaurant/Bar Management industry. The candidate should be comfortable establishing and cultivating relationships with new and existing clientele and show a passion for their work. Willing to serve as a hands-on participating member of the BTS/HGH team.  Local knowledge and experience within Southern California is preferred although not required.

Job Duties & Responsibilities:

Staffing Management/Scheduling –

  • Interview and Screening of potential Service / Bartending employees.

  • Supervision of Front of House Staff, when required.

  • Coordinate and maintain staff scheduling and assignments to assure all scheduled shifts have appropriate staff levels for required service.  Culinary staff scheduling shall continue to be managed by the venue Executive Chef, however, for on-site events, culinary staffing needs are to be coordinated to assure proper labor levels are maintained.

General Operations

  • Maintain Inventory of Dry Goods, beverages, linen, décor, and china items. Includes support of Venue Chef and staff.

  • Work with Kitchen and Event staff to assure efficient and cost-effective ordering of supplies and food items.

  • Work with Vendors to assure proper ordering of stock and delivery is organized.

  • Work with designated BTS staff member regarding regular and scheduled maintenance of equipment

  • Work with BTS Logistics Manager(s) on scheduling of deliveries, as required from BTS warehouse

  • Liaise with Rental Equipment companies to assure all orders are placed, accurate, timely and properly returned. To be coordinated with Sales Team members who take the lead on this task, only relates to Special Events.

  • Overall management and supervision of all outgoing Food and Beverage services at Salt & Whiskey Restaurant. 

 

Special Projects

  • Work with BTS Director(s) and/or Managers on special projects.

  • Assist and develop tracking and event costing reports, as required.

  • Supervision of Daily POS reports to assure proper money and tip handling and reporting are taking place.

  • Creation and implementation of operational systems and procedures to be carried out by permanent and on call staff.

  • Restructuring and implementation of employee training and education program. 

  • Work with BTS Management on creative décor, menu, and incentive packages. 

  • Work with Back of House Staff (Culinary Staff) to assure clients are receiving quality menus and service.

  • Work with company President to assist with general operations tasks related to venue

Management Reporting/Responsibilities

  • Work with BTS Management Team to assure proper communication and information dissemination between BTS Management Team and staff.

Kitchen Staff

Behind The Scenes Catering is currently looking to fill multiple part-time and full-time hourly kitchen positions. Candidates must be able to work flexible hours and will be subject to Background & Security Checks.

Sous Chefs/On Site Event Chef: Responsibilities include preparation of all meals provided to client within the event compound, venue or designated work site. Menus are to be prepared according to BTS recipes and standards as indicated by Executive Chef. The On-Site Chef will be responsible for the supervision of all Line Cooks, Prep Cooks, Utility Staff and Front of House Service Staff in the absence of a Front of House Manager. Responsible to maintain the integrity of the selected service menus, quality of food monitoring on buffets, box meals and all items prepared from designated service location. Responsible for daily food ordering and food related inventories. Cleanliness and general organization of work site, kitchen equipment and storage areas. Responsible for the adherence and training of staff in local health and safety standards as well as policies & procedures in force at event site following HACCP Standards. Reports directly to Executive Chef and/or the assigned Operations Manager.

Prep Chefs: Responsibilities include food preparation of both hot and cold meal items as identified in predetermined rotational menus. Will also assist with basic kitchen utility tasks, and other kitchen duties assigned by the Lead On-Site Chef at the assigned venue or compound. This may include but is not limited to culinary tasks, inventory maintenance and monitoring, food safety monitoring, food preparation, and dishwashing. Reports directly to Lead On-site Chef.

 

Dishwasher/Kitchen Utility Hands: Responsibilities include the washing, sanitizing and storage of pots, pans, dishes, kitchen utensils and other items as required. Position will also be responsible for general cleaning of kitchen areas as well as floors, walk in coolers and other areas as directed by Lead On-site Chef.

 

Requirements:

  • Minimum of 2 years related experience or training

  • Ability to communicate effectively with clients and colleagues

  • Kitchen and line prep experience

  • Maintain a high level of personal hygiene

  • Availability on nights and weekends

  • Able to stand for long periods of time and regularly lift/move 25+ lbs.

  • Have reliable transportation

 

Warehouse Manager

Location: San Diego County, CA

We are looking for a dynamic and energetic Warehouse Manager that has at least 3 years’ experience, preferably in the hospitality industry. Must have strong leadership and interpersonal communication skills, with the ability to manage and develop a team. This position reports to the Director of Operations.

Job Duties & Responsibilities:

A. Warehouse Staff

  • Maintain warehouse staff by recruiting, selecting, orienting, and training employees

  • Maintain warehouse staff job results through planning, monitoring, and appraising job results

  • Manage warehouse schedule

  • Manage daily task list in coordination with Logistics Manager and Director of Operations

  • Assign work, set completion dates, review work, and manage performance in accordance with organizational policies, procedures, and performance management processes

  • Provide coaching, mentoring, and counseling to warehouse employees, and issue corrective action when required

  • Coordinate with Staffing & Operations Manager to schedule Event Managers/Service staff for Warehouse Training

  • Coordinate with Staffing & Operations Manager to schedule Warehouse staff for events offsite

  • Coordinate with Special Projects Manager to schedule Warehouse staff for BTS special projects throughout the year

B. General Operations/Warehouse

  • Maintain inventory of warehouse equipment, china, linen, décor, dry goods, beverages, etc. by conducting physical counts and reconciling with inventory system

  • Maintain inventory of liquor cage and establish process to check-in/check-out goods for events, tracking consumption, placing orders to maintain PAR levels

  • Develop and monitor procedures for safety and security of warehouse environment by establishing and monitoring security procedures and protocol in compliance with CAL Osha regulations, to include regular logs and trainings.

  • Establish procedures for warehouse receiving area and maintain logs in coordination with the Front Office

  • Maintain BTS Vehicle Maintenance Program through established tracking system, keeping up to date with regular and scheduled maintenance and repair of BTS vehicle fleet

  • Coordinate with Logistics Manager on scheduling of delivery vehicles for daily drops and event use

  • Liaise with Rental Equipment companies to assure all orders are placed, accurate, timely and properly returned

  • Work with Director of Operations to establish new protocols and procedures to ensure that all events are complete and accurate when pulled and trucks/vans are properly loaded and all equipment is accounted for

  • Work with Director of Operations to establish new protocols and procedures to ensure that all equipment and rentals are properly returned and inventoried to the warehouse

  • Contribute to team effort by accomplishing related results as needed

C. Special Projects

  • Work with BTS Director(s) and/or Managers on special projects and events.

  • Work with Director of Operations to create and implement operational systems and procedures to be carried out by all warehouse/logistics staff.

  • Work with Director of Operations to continually improve systems and work flow efficiencies.

  • Oversee and monitor building maintenance needs and repairs, as required

Event Manager

Responsibilities include managing event employees, client needs on event site, menu integrity, communication with onsite kitchen team, timely service, event set-up, event clean-up, load-out of event and overall operation of catering areas at all assigned events and functions. Employee will communicate and coordinate all event details with the Sales Manager and Executive Chef prior and post event. We count on this employee to be our client liaison and ensure that all guests (including our client) are beyond satisfied with their experience.

 

Captain/Lead Server

Responsibilities include managing a team of employees, menu integrity, communication with onsite kitchen team, timely service, event set-up, event clean-up, load-out of event and overall operation of catering areas at all assigned events and functions. We count on this employee to ensure that the event runs smoothly and that all guests are beyond satisfied with their experience. Employee works with Event Manager onsite.

 

Bartender/Barback

Responsibilities include set up and service of all BTS bars as well as running beverage product from BOH areas to maintain a fully stocked, efficient bar area. Bars will range from Full Top Shelf to Beer & Wine. A knowledge of basic cocktails, beer and wine, ABC rules and regulations and a willingness to jump in where needed is required. We count on this position to greet and assist guests in a friendly, polite manner. Tasks may also include keeping all areas clean by bussing tables, changing out and running trash in/to BOH areas and overall set-up and tear down of venue catering equipment and service/prep areas.

 

Server

Responsibilities include set-up and service of food buffets/stations, as well as running food from our BOH areas to the FOH to maintain a clean and fully stocked front of house. We count on this group to maintain food standards, as well as greet and assist guests in a friendly polite manner. Tasks may also include overall set-up and tear down of venue catering equipment and service/prep areas.

 

Bussers/Runners

Responsibilities include keeping all areas clean by bussing tables, wiping down buffets, changing out and running trash in/to BOH areas. Tasks may also include set-up and service of food buffets/stations, as well as running food from our BOH areas to the FOH to maintain a clean and fully stocked front of house in addition to the overall set-up and tear down of venue catering equipment and service/prep areas.

 

Delivery Driver

Responsibilities include maintaining cleanliness of vehicle, daily check-in & check-out. Comfortability driving a variety of vehicles from transit vans to refrigerated trucks. Good driving record & road safety top priority. Tasks may also include packaging out meals and restocking/cleaning of work stations.

 

Warehouse

Responsibilities include sorting, packing, loading, delivery, unloading, and tasks related to the product and order fulfillment for operational venues. Employee required to lift 50lbs.
